Unmanned Store Expansion to Drive Robot Barista Market to Surpass $2.1 Billion by 2026

Driven by the expansion of unmanned stores, the global AI robot barista market is projected to reach approximately 3 trillion won by 2026. Market research firm GII Research forecasts that the sector will grow at an annual average rate of 16.8% through 2030, expanding to a scale of approximately 5.6 trillion won.

Structural burdens within the Western food service industry underpin this trend. An analysis released in May by Restaurant Finance Advisors revealed that labor costs at traditional Western cafes account for 25 to 35% of sales. The annual turnover rate for baristas in urban areas exceeds 75%, and the resignation of a single employee results in a loss of up to $3,000 due to recruitment and training costs. The combination of rising minimum wages in major Western nations and chronic labor shortages has accelerated the adoption of robotic automation.

Robots can operate continuously for 24 hours a day, including night shifts, without incurring additional labor costs. In stores located in airports or hospitals, sales between 11 p.m. and 5 a.m. account for 15 to 22% of total daily revenue, demonstrating the profitability of unmanned operations.

The technology is also entering a mature phase. Thanks to precision 6-axis robotic arms and real-time foam-detecting camera sensors, beverage preparation consistency has reached 98%. Additionally, cloud-based remote control systems allow a single operator to manage more than 10 units simultaneously. Major companies, such as Shenzhen Muku Technology, are expanding the ecosystem by supplying equipment to over 60 countries.

GII Research identified the proliferation of subscription models to lower upfront equipment costs, the management of raw material price fluctuations, and rapid equipment maintenance systems as key variables for the successful market establishment.
